Mushroom Mustard Sauce

Serve over roasted, grilled or pan-fried chicken. This makes enough sauce for 6 to 8 people.
Ingredients
  • 1 tbsp butter
  • 2 tsp canola oil
  • 2 cups sliced mushrooms
  • 2 garlic cloves, minced
  • 2 tbsp all purpose flour
  • 1 cup chicken broth
  • 2 tbsp sour cream
  • 2 tbsp dijon mustard
  • salt and cracked black pepper to taste
Instructions
  1. Heat the butter and oil in a large frying pan over medium high heat.
  2. Add the mushrooms and garlic and cook, stirring occasionally for about 5 minutes or until the mushrooms are softened.
  3. Stir in the flour and cook, stirring for 1 minute to cook the flour.
  4. Add the remaining ingredients and boil gently, uncovered, stirring occasionally, for about 5 minutes or until thickened.
Notes
Make Ahead: This sauce is best made just before serving.

Makes about 2 cups.
