Basil Chili Marinade

- ⅓ cup dry white wine
- 2 tbsp olive oil
- 3 tbsp chopped fresh basil
- 1 tsp sambal oelek (chili paste)
- 1 tbsp grainy mustard
- 2 garlic cloves minced
- Combine all the ingredients in a large non-reactive bowl or resealable plastic bag.
- Add your favourite cut of chicken to the marinade.
- Stir or toss to combine.
- Cover or seal.
- Marinade the chicken for about 8 hours or overnight.
- Remove the chicken from the marinade and discard any leftover marinade.
- Pan fry, broil or barbecue the chicken until tender.
Make Ahead: This marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.
