Basil Chili Marinade

This is enough to marinate 1 lb (500 g) of chicken.
Ingredients
  • ⅓ cup dry white wine
  • 2 tbsp olive oil
  • 3 tbsp chopped fresh basil
  • 1 tsp sambal oelek (chili paste)
  • 1 tbsp grainy mustard
  • 2 garlic cloves minced
Instructions
  1. Combine all the ingredients in a large non-reactive bowl or resealable plastic bag.
  2. Add your favourite cut of chicken to the marinade.
  3. Stir or toss to combine.
  4. Cover or seal.
  5. Marinade the chicken for about 8 hours or overnight.
  6. Remove the chicken from the marinade and discard any leftover marinade.
  7. Pan fry, broil or barbecue the chicken until tender.
Notes
Make Ahead: This marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.
