Spiced Crumb Coating

- ½ tsp ground cumin
- ½ tsp ground coriander
- ¼ tsp salt
- ¼ tsp cracked black pepper
- ⅛ tsp ground cinnamon
- ⅛ tsp ground nutmeg
- ⅛ tsp ground cardamom
- 1 cup fine dry (or panko) breadcrumbs
- ⅔ cup pecans, toasted
- Put all the ingredients in a food processor.
- Process until the nuts are finely chopped.
- Crumb the chicken or roast for about 15 minutes until golden.
Make Ahead: This coating can be made a month ahead and stored in an airtight container in the freezer.
Makes about ½ cup.
