Chicken Panini Sandwich

- sliced roasted or grilled chicken breast
- sliced tomato
- sliced avocado
- mixed green lettuce leaves
- mozzarella and provolone cheese
- 2 slices of any crusty bread or panini bread
- wholegrain mustard
- salt and pepper
- olive oil
- Preheat your panini press.
- Spread mustard onto each cut side of bread.
- Layer one cut side of bread with chicken, cheese, avocado, tomato and organic leaves.
- Cover each with one of the remaining pieces of bread (try to place the lettuce leaves in the middle of the sandwich to stay fresh).
- Press the sandwiches firmly together.
- Brush both sides of each sandwich with olive oil then grill until bread is golden brown and cheese has melted for about 5 to 10 minutes.
If you don't have a panini press, you may use a George Foreman grill or one of similar quality.
