Moroccan Spice Rub

- 1 small onion chopped
- 2 tbsp lemon juice
- 4 garlic cloves minced
- 1 tbsp white vinegar
- 1 tbsp olive oil
- 1 tbsp salt
- ½ tsp cracked black pepper
- ½ tsp cayenne pepper
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground cloves
- Combine all the ingredients in a small bowl.
- Rub all over the chicken.
- Cover and marinate in the refrigerator for at least three hours or overnight. Pan-fry, broil, barbeque or roast the chicken until tender.
Make ahead: This rub can be made 2 weeks ahead and stored in an airtight container in the refrigerator.
Makes ⅔ cup: Enough to coat 1½ lb chicken pieces of 1 whole chicken.
