Moroccan Spice Rub

A flavorful and spicy rub, not for the faint of heart!
Ingredients
  • 1 small onion chopped
  • 2 tbsp lemon juice
  • 4 garlic cloves minced
  • 1 tbsp white vinegar
  • 1 tbsp olive oil
  • 1 tbsp salt
  • ½ tsp cracked black pepper
  • ½ tsp cayenne pepper
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
Instructions
  1. Combine all the ingredients in a small bowl.
  2. Rub all over the chicken.
  3. Cover and marinate in the refrigerator for at least three hours or overnight. Pan-fry, broil, barbeque or roast the chicken until tender.
Notes
Make ahead: This rub can be made 2 weeks ahead and stored in an airtight container in the refrigerator.

Makes ⅔ cup: Enough to coat 1½ lb chicken pieces of 1 whole chicken.
