Sun Dried Tomatoes and Chicken Pasta

- 3 cups penne pasta
- 1 chorizo sausage, chopped
- 1 lb (500 g) skinless boneless chicken breasts, chopped
- 4 garlic cloves, minced
- 1 cup sliced green onion
- 1 jalapeño pepper, chopped
- ⅔ cup sun dried tomatoes in oil, drained and chopped
- 1 cup whipping cream
- ¼ cup coarsely chopped fresh basil
- salt and cracked black pepper
- ⅓ cup finely grated fresh parmesan cheese
- Cook the pasta in a large pot or dutch oven in salted boiling water for about 15 minutes or until al dente.
- Drain the pasta and return to the same pot.
- While the pasta is cooking, cook the chorizo in a large frying pan over medium high heat for about 5 minutes or until browned.
- Add the chicken and garlic and cook, stirring occasionally for 5 minutes or until the onion is softened.
- Stir in the cream, basil, salt and pepper, stirring occasionally for 5 minutes or until the sauce is thickened slightly.
- Add the chicken mixture and parmesan cheese to the pasta and toss to combine.
