Chicken with Chives and Snap Peas

½ tsp salt 2 tbsp dry sherry 1 lb (500 g) skinless, boneless chicken breasts, thinly sliced 1 tbsp cornstarch ½ cup chicken broth 1 tbsp soy sauce 1 tbsp oyster sauce ½ tsp sesame oil 1 tbsp canola (or peanut) oil 1 tsp finely chopped ginger 2 garlic cloves, minced 4 oz (125 g) sugar snap peas, trimmed ¼ cup chopped garlic chives (or green onions) ⅓ cup whole almonds, toasted Combine the salt, sherry and chicken in a medium bowl and set aside. Combine the cornstarch, broth, soy sauce, oyster sauce and sesame oil in a small bowl and set aside. Heat a wok or large frying pan over medium high heat. Add the canola oil, ginger and garlic and stir fry for about 1 minute or until fragrant. Add the chicken mixture and stir fry for 3 minutes. Add the peas and broth mixture and stir fry for about 2 minutes or until the chicken is tender and the peas are crisp and bright green. Add the chives and almonds and stir fry until combined. Serving Suggestion: Serve with piping hot, thin rice noodles.
