Chicken, Bean and Mushroom Stir-Fry

Sliced zucchini can be used in place of green beans, if preferred.
Ingredients
  • 1 tbsp canola oil
  • 1 lb (500 g) skinless, boneless chicken thighs (or breasts)
  • 1 bunch of green onions, sliced
  • 2 garlic cloves, minced
  • 2 cups sliced mushrooms
  • ¼ cup chicken broth
  • 2 tbsp jalapeño spread
  • 1 tsp cornstarch
  • ½ lb (250 g) green beans (or a mixture of green and yellow)
  • ½ tsp salt
  • 2 tbsp shredded fresh basil
  • 1 tbsp lime juice
Instructions
  1. Heat the oil in a wok or large frying pan over high heat.
  2. Add the chicken, green onions, garlic and mushrooms and cook, stirring occasionally for about 10 minutes or until the chicken is almost cooked.
  3. Combine the broth, jalapeño spread and cornstarch in a small bowl.
  4. Add to the chicken and cook, uncovered stirring occasionally for 5 minutes.
  5. Add the remaining ingredients and cook, uncovered for 3 to 5 minutes or until the beans are crisp and bright green.
Notes
Serving Suggestion: Served with steamed basmati or jasmine rice.
