Ginger and Soy Marinade

Serves: ¾ cups
 
This is enough to marinate 1 lb (500 g) chicken pieces.
Ingredients
  • 1 tbsp finely grated ginger
  • 2 garlic cloves, minced
  • 1 tbsp canola oil
  • ½ tsp Chinese five spice powder
  • ¼ cup soy sauce
  • 1 tbsp rice (or white wine) vinegar
  • ¼ cup finely chopped shallot
  • 1 tbsp honey
Instructions
  1. Combine all the ingredients in a large, non reactive bowl or re-sealable plastic bag.
  2. Add the chicken pieces of your choice.
  3. Stir or toss to combine. Cover or seal.
  4. Marinate in the refrigerator for 8 hours or overnight.
  5. Remove chicken from the marinade and discard any marinade.
  6. Cook chicken on a barbecue, grill pan or roast in the oven until tender.
Notes
Make ahead: The marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.
