Tender moist chicken with a hint of lime and just the right amount of spices to make it memorable!

Ingredients
  • ¼ cup chopped fresh cilantro or parsley
  • 3 tbsp cooking oil
  • 2 tsp dried crushed chilies (optional)
  • 1 tsp ground cumin
  • 2 garlic cloves, minced
  • 1 lb boneless, skinless chicken breast halves
  • ¼ cup lime juice
  • ¼ cup corn relish
  • ¼ cup sour cream
  • 4 flour tortillas (10 inch diameter)
  • 1 large ripe avocado, sliced
  • 1 red medium pepper (seeded and ribs removed) – thinly sliced
  • 1 cup grated medium cheddar cheese
Instructions
  1. Combine first five ingredients in a medium bowl.
  2. Add chicken and stir.
  3. Cover with plastic wrap and chill in refrigerator for 1 hour, stirring occasionally.
  4. Add lime juice to chicken mixture and stir.
  5. Drain and discard liquid.
  6. Preheat barbecue to medium.
  7. Cook chicken on greased grill for 10 to 15 minutes per side until no longer pink inside.
  8. Cut diagonally into thin slices.
  9. Cover to keep warm.
  10. Measure corn relish and sour cream into a small bowl and stir.
  11. Spread about 2 tbsp on each tortilla.
  12. Divide and layer chicken, avocado, red pepper and cheese across center of each tortilla, leaving 2 inches at each side.
  13. Fold sides over filling.
  14. Roll up from bottom to enclose filling.
  15. Slice in half diagonally.
  16. Cook wraps on greased grill on medium for 5-7 minutes, turning occasionally, until crisp and golden.
