This is enough to coat 1½ lb (750 g) of chicken pieces or a whole chicken.
  • 1 tbsp packed brown sugar
  • 1 tbsp finely grated orange zest
  • 1 tsp finely grated lemon zest
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • ½ tsp cracked black pepper
  1. Combine all the ingredients in a small bowl.
  2. Rub all over the chicken.
  3. Cover and marinade in the refrigerator for 3 hours or overnight.
  4. Pan fry, broil, barbecue or roast the chicken until tender.
Make Ahead: This rub can be made 2 weeks ahead and stored in an airtight container in the refrigerator.
