Lemon Grass and Lime Marinade

This is enough to marinate 1 lb (500 g) of chicken pieces.

Ingredients
  • ¼ cup lime juice
  • 1 tbsp finely chopped ginger
  • ¼ cup chopped fresh cilantro
  • 2 tsp finely grated lime zest
  • 3 tbsp Thai sweet chili sauce
  • 1 tsp sesame oil
  • 2 tbsp canola (or peanut) oil
  • 2 garlic cloves, minced
  • 2 tbsp finely chopped lemon grass
  • 2 tsp fish sauce
Instructions
  1. Combine all the ingredients in a large, non reactive bowl or resealable plastic bag.
  2. Add the chicken pieces of your choice.
  3. Stir or toss to combine.
  4. Cover or seal.
  5. Marinate in the refrigerator for 8 hours or overnight.
  6. Remove the chicken from the marinade and discard any leftover marinade.
  7. Cook chicken on a barbecue, grill pan or roast in the oven until tender.
Notes
Make Ahead: The marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.
