This is enough to marinade 1 lb (500 g) chicken pieces.

Ingredients
- 1 small onion, chopped
- 2 tbsp lemon juice
- 4 garlic cloves, minced
- 1 tbsp white vinegar
- 1 tbsp olive oil
- 1 tbsp salt
- ½ tsp cracked black pepper
- ½ tsp cayenne pepper
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground cloves
Instructions
- Combine all the ingredients in a small bowl.
- Rub all over the chicken.
- Cover and marinate in the refrigerator for 3 hours or overnight.
- Pan fry, broil, barbecue or roast the chicken until tender.
Notes
Make Ahead: This rub can be made 2 weeks ahead and stored in an airtight container in the refrigerator.
