Ingredients
  • 2 ½ (675 mL) cups chicken stock
  • 1 cup (250 mL) milk
  • 1 ½ cups (325 mL) cooked chicken, shredded
  • 1 cup (250 mL) small soup noodles
  • ¼ (60 mL) cup flour
  • 2 tbsp (30 mL) butter
  • 3 celery stalks, chopped
  • 3 carrots, peeled and chopped
  • 1 clove of garlic, minced
  • ½ zucchini, diced small
  • ½ onion, diced small
  • 1 tsp (5 mL) garlic salt
  • 1 tsp (5 mL) onion powder
  • 1 tbsp (15 mL) fresh thyme, chopped
Instructions
  1. In a medium pot, on medium heat, add butter. Add onions and garlic, sauté until translucent. Add celery, carrots, zucchini, shredded chicken and the remaining tablespoon of butter. Sauté for another 2-5 minutes. Add flour, and stir for another 5 minutes until flour coats everything well.
  2. Add the chicken stock and stir. Add soup noodles. Let simmer for 10 minutes before adding the milk. Reduce heat to low. As the soup and noodles cook, the broth will thicken. Simmer on low for another 10-15 minutes.
  3. Season with salt and pepper to taste. Garnish with fresh thyme and serve hot.
Notes
Try dark meat like chicken thighs or legs in this recipe. Dark meat is not only extra flavourful, but also boasts even more immune-boosting zinc than white meat.

Make your own homemade chicken broth, or try a brand with no added salt. This way you’ll maximize nutrition and minimize unnecessary sodium.
