This light and flavorful Frittata is perfect for breakfast. Add a side of fruit and whole grain toast!

Ingredients
- 2 cups fresh broccoli florets
- 2 cups chopped, cooked chicken
- 12 eggs
- 1 red pepper, diced
- ½ cup 10 percent half and half cream
- ½ tsp. salt and pepper
- 1 cup shredded Canadian cheddar or Swiss cheese, divided
Instructions
- Preheat oven to 325 degrees.
- In a frying pan, lightly saute broccoli and red pepper until partially cooked.
- Lightly butter a 9 x 12 inch glass pan and scatter broccoli, red pepper, chicken and cheese on the bottom.
- In a large bowl, whisk eggs until blended.
- Whisk in cream, salt, pepper and pour over the chicken, vegetables and cheese.
- Bake for 30 to 35 minutes or until puffed golden and eggs are set.
- Let stand for 5 minutes before cutting into wedges.
