Ingredients
  • 3 flour tortillas (8 inch)
  • 1 avocado, halved and pitted
  • ¼ cup sour cream
  • ¼ cup seeded and chopped tomato
  • 1 tbsp lime juice
  • 1 tsp minced garlic
  • 2 tbsp chopped fresh cilantro
  • salt to taste
  • ¾ cup ketchup
  • 3 tbsp brown sugar
  • 2 tbsp chopped chipotles in adobo sauce
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp apple cider vinegar
  • 2 cups cooked and shredded chicken breast
  • Garnish: Sour cream, cilantro, lime zest
Instructions
  1. Preheat oven to 425°F.
  2. Coat both sides of tortillas with non-stick spray.
  3. Stack and cut into 8 wedges; push into muffin cups, see below.
  4. Bake until golden, 2 to 4 minutes.
  5. Avocado Mixture: Mash avocado, ¼ cup sour cream, tomato, lime juice, garlic, 2 tablespoons cilantro, and salt together in a bowl.
  6. Chicken Mixture: Simmer ketchup, sugar chipotles, soy sauce, and vinegar in a saucepan over medium-low heat until sauce is syrupy, about 8 minutes.
  7. Stir in chicken.
  8. Top each tostada with 1 tablespoon avocado mixture, then 1 tablespoon chicken mixture.
  9. Garnish each tostada with sour cream, cilantro, and zest.
