Don't be concerned about the amount of ingredients. This recipe is easy to make and very tasty. The satay skewers can also double as a main course served with steamed jasmine rice. Fish sauce is available in the Asian section of most grocery stores and Asian markets.

Ingredients
Chicken Skewers
- 12, 8 inch (20 cm) wooden skewers
- ¼ cup finely chopped shallot
- 4 garlic cloves, minced
- 2 tsp finely grated ginger
- 2 tsp ground coriander
- 2 tsp ground turmeric
- 2 tsp packed brown sugar
- ½ tsp salt
- 2 tbsp soya sauce
- 2 tbsp canola (or peanut) oil
- 1½ lbs (750 g) skinless boneless chicken thighs or breasts, cut into strips
Peanut Sauce
- 1 tbsp canola (or peanut) oil
- 2 tbsp finely chopped shallot
- 2 garlic cloves, minced
- 1 medium red chili, chopped
- ½ cup crunchy peanut butter
- ½ cup coconut milk or broth
- 1 tbsp packed brown sugar
- 1 tbsp lime juice
- 1 tbsp soya sauce
- 1 tsp fish sauce
Instructions
- Soak the skewers in water for at least 30 minutes before using.
- Combine the ingredients in a large, non-reactive bowl or re-sealable plastic bag and place in the refrigerator for 30 minutes.
- Preheat the barbecue, electric grill or grill pan to medium high.
- Thread the chicken onto the skewers and cook on the preheated, greased grill, turning occasionally, for 7 to 10 minutes or until the grill marks appear and the chicken is tender.
- To make the peanut sauce, heat the oil in a small saucepan over medium heat.
- Add the shallot, garlic and chili and cook for 1 to 2 minutes until fragrant.
- Stir in the remaining ingredients.
- Cook uncovered, stirring occasionally for about 3 minutes or until thickened slightly.
- Serve warm with the satay skewers.
Notes
Make ahead: The chicken can be marinated 1 day ahead and stored in an airtight container in the refrigerator.
