Broccoli, Carrot and Chicken Stir-Fry

Ingredients
- ¼ cup chicken broth or water
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 2 tsp cornstarch
- ½ tsp sesame oil
- 1 tbsp canola (or peanut) oil
- 1 lb (500 g) skinless, boneless chicken breasts, thinly sliced
- 1 medium onion, cut into thin wedges
- 2 garlic cloves, minced
- 1 tsp finely chopped ginger
- 3 medium carrots, peeled and cut into julienne strips
- 3 cups broccoli florets
- 2 cups sliced mushrooms
Instructions
- Combine the broth, soy sauce, hoisin sauce, cornstarch and sesame oil in a small bowl and set aside.
- Heat a wok or large frying pan over high heat.
- Add the canola oil, chicken, onion, garlic and ginger and stir fry for 5 to 7 minutes or until the chicken is almost tender.
- Add the vegetables and soy sauce mixture and stir-fry until the vegetables are crisp and bright and the chicken is tender.
Notes
Serving Suggestion: Serve with steamed egg noodles or jasmine rice.
