Ingredients
- 4 pita bread
- 2 tbsp olive oil, plus extra for drizzling
- ¼ cup
sun dried tomato pesto - ½ cup finely grated parmesan cheese, plus ½ cup extra
- 2 garlic cloves, minced
- 1½ cups shredded cooked chicken
- 1 small yellow pepper, sliced
- 1 pint (550 ml) basket of cherry tomatoes, halved
- ¼ cup loosely packed basil leaves, torn
- salt and cracked black pepper
Instructions
- Preheat the barbecue to
medium low . - Brush both sides of each pita bread with 2 tablespoons of the oil.
- Spread one side with the pesto.
- Sprinkle with ½ cup of parmesan cheese, garlic and the remaining ingredients.
- Sprinkle with the extra parmesan cheese and drizzle with a little oil.
- Place the pitas on the preheated greased grill.
- Cook with the lid down, for about 5 minutes or until the cheese is melted and the bread is crisp.
Notes
Make ahead: The pizzas are best made before serving.
