A perfect sandwich for picnics and weekday lunches.
Serves: 4 to 6 Sandwiches.
  • 1½ cups chopped cooked chicken
  • ⅓ cup thinly sliced green onion
  • ⅓ cup finely chopped celery
  • ⅓ cup finely chopped red pepper
  • ⅓ cup whole egg mayonnaise
  • 3 tbsp whipping cream (or half and half)
  • salt and cracked black pepper
  • 8 to 12 bread slices of your favorite bread, buttered if desired
  1. Combine the chicken, green onion, celery, red pepper, mayonnaise, cream, salt and pepper in a medium bowl.
  2. Top half of the bread slices with the chicken mixture and cover with the remaining bread slices.
Make Ahead: The filling can be made up to 3 days ahead and stored covered in the refrigerator.

TIP: A store bought roasted chicken saves time and is quick and easy when a recipe calls for cooked chicken.
