Ingredients
- 3 flour tortillas (8 inch)
- 1 avocado, halved and pitted
- ¼ cup sour cream
- ¼ cup seeded and chopped tomato
- 1 tbsp lime juice
- 1 tsp minced garlic
- 2 tbsp chopped fresh cilantro
- salt to taste
- ¾ cup ketchup
- 3 tbsp brown sugar
- 2 tbsp chopped chipotles in adobo sauce
- 2 tbsp low-sodium soy sauce
- 2 tbsp apple cider vinegar
- 2 cups cooked and shredded chicken breast
- Garnish: Sour cream, cilantro, lime zest
Instructions
- Preheat oven to 425°F.
- Coat both sides of tortillas with non-stick spray.
- Stack and cut into 8 wedges; push into muffin cups, see below.
- Bake until golden, 2 to 4 minutes.
- Avocado Mixture: Mash avocado, ¼ cup sour cream, tomato, lime juice, garlic, 2 tablespoons cilantro, and salt together in a bowl.
- Chicken Mixture: Simmer ketchup, sugar chipotles, soy sauce, and vinegar in a saucepan over medium-low heat until sauce is syrupy, about 8 minutes.
- Stir in chicken.
- Top each tostada with 1 tablespoon avocado mixture, then 1 tablespoon chicken mixture.
- Garnish each tostada with sour cream, cilantro, and zest.
