Fried Chicken Drumsticks on Red Fife Pancakes

Ingredients
- 10 to 12 Chicken Drumsticks
- 4 cups buttermilk
- ¼ cup hot sauce
Chicken Flour
- 8 cups flour
- 2 tsp cajun spice
- 4 tbsp garlic powder
- 4 tbsp onion powder
- 1 tsp cayenne pepper
- 2 tsp paprika
- 1 tsp cumin
- 2½ tbsp chili powder
- 1 tsp black pepper
- 3 tsp salt
Red Fife Pancake Batter
- 2 cups red fife flour
- 2 cups all-purpose flour
- 4 cups buttermilk
- 2 tsp salt
- ½ cup brown sugar
- 2 tbsp baking powder
- 6 eggs
Garlic Thyme Syrup
- 4 cups maple syrup
- 3 sprigs fresh thyme
- 6 cloves garlic
Instructions
- Mix hot sauce and buttermilk together and pour over drumsticks, marinate for 24 hours.
Chicken Flour
- Mix all ingredients in bowl with a whisk until all spice is mixed thoroughly.
Red Fife Pancake Batter
- Whisk together eggs, sugar, and buttermilk. Add flour to wet ingredients - you may need to adjust batter it it's too thick or too runny.
Garlic Thyme Syrup
- Add all ingredients to a small pot and cook over low heat for 1 hour so all the flavours come together.
- After the chicken has marinated, remove meat from the buttermilk mixture and coat in the seasoned flour, making sure all of the chicken is coated well. Let sit for 20 to 25 minutes before cooking.
- Preheat a deep fryer or cast iron skillet with oil to 275°F to 300°F.
- Cook chicken for about 10 to 12 minutes, or use an internal meat thermometer to test doneness at 165°F.
- Will chicken is cooking, make the pancakes.
- Using a ½ cup measure, scoop out pancake batter and pour onto a non-stick pancake griddle to brown on both sides.
- After pancakes and chicken are cooked, place pancakes on a platter, add chicken drumsticks on top of pancakes, and top with maple syrup.
Notes
Optional: Drizzle a little hot sauce over top of the pancakes and chicken.
