This is enough to coat 1½ lbs (750 g) of chicken.
  • 1 cup panko bread crumbs
  • 2 tbsp fine cornmeal (polenta)
  • 1 tsp chicken bouillon powder
  • ½ tsp celery salt
  • ½ tsp cracked black pepper
  • ½ tsp garlic powder
  1. Put all the ingredients in a food processor.
  2. Process until well combined.
  3. Pour into a large re-sealable plastic bag.
  4. Add chicken pieces of your choice and toss to coat.
  5. Place the chicken on a greased rack on a baking sheet.
  6. Roast in 400°F (200°C) oven for 45 to 50 minutes until cooked and golden.
Make Ahead: This coating can be made a month ahead and stored in an airtight container in a cool, dry place.

Makes about ⅔ cup.
