We used "blue de bresse", a mild and creamy blue cheese in this recipe.
Serves: 6
Blue Cheese Dressing
  • 2 tbsp finely chopped shallot
  • ⅓ cup canola oil
  • 2 oz (60 g) of blue cheese, chopped
  • 2 tbsp white wine vinegar
  • 1 tbsp honey
  • salt and cracked black pepper
Chicken Salad
  • 1 tbsp canola oil
  • 3 medium apples, peeled, cored and sliced
  • salt and cracked black pepper
  • 2 cups shredded cooked chicken
  • 3 cups baby spinach leaves
  • 1 radicchio lettuce, torn
To Make Blue Cheese Dressing
  1. Put all the ingredients in a jar and shake well until combined.
To Make Chicken Salad
  1. Heat the oil in a medium frying pan over medium high heat.
  2. Add the apples, salt and pepper and cook, stirring occasionally for about 5 minutes or until softened slightly and lightly browned.
  3. Put the chicken, apples, spinach and radicchio in a large bowl.
  4. Drizzle with the dressing and gently toss.
Make Ahead: The dressing can be made a day ahead and stored in an airtight container in the refrigerator. Remove from refrigerator 1 hour before serving.

Serving Suggestion: Serve with warm rolls and a glass of crisp white wine.
