Chicken, Bean and Mushroom Stir-Fry

Sliced zucchini can be used in place of green beans, if preferred.

Ingredients
- 1 tbsp canola oil
- 1 lb (500 g) skinless, boneless chicken thighs (or breasts)
- 1 bunch of green onions, sliced
- 2 garlic cloves, minced
- 2 cups sliced mushrooms
- ¼ cup chicken broth
- 2 tbsp jalapeño spread
- 1 tsp cornstarch
- ½ lb (250 g) green beans (or a mixture of green and yellow)
- ½ tsp salt
- 2 tbsp shredded fresh basil
- 1 tbsp lime juice
Instructions
- Heat the oil in a wok or large frying pan over high heat.
- Add the chicken, green onions, garlic and mushrooms and cook, stirring occasionally for about 10 minutes or until the chicken is almost cooked.
- Combine the broth, jalapeño spread and cornstarch in a small bowl.
- Add to the chicken and cook, uncovered stirring occasionally for 5 minutes.
- Add the remaining ingredients and cook, uncovered for 3 to 5 minutes or until the beans are crisp and bright green.
Notes
Serving Suggestion: Served with steamed basmati or jasmine rice.
