Wonderful flavourful sandwich, grilled to perfection!

Ingredients
  • sliced roasted or grilled chicken breast
  • sliced tomato
  • sliced avocado
  • mixed green lettuce leaves
  • mozzarella and provolone cheese
  • 2 slices of any crusty bread or panini bread
  • wholegrain mustard
  • salt and pepper
  • olive oil
Instructions
  1. Preheat your panini press.
  2. Spread mustard onto each cut side of bread.
  3. Layer one cut side of bread with chicken, cheese, avocado, tomato and organic leaves.
  4. Cover each with one of the remaining pieces of bread (try to place the lettuce leaves in the middle of the sandwich to stay fresh).
  5. Press the sandwiches firmly together.
  6. Brush both sides of each sandwich with olive oil then grill until bread is golden brown and cheese has melted for about 5 to 10 minutes.
Notes
If you don't have a panini press, you may use a George Foreman grill or one of similar quality.
