Garlic chives or flowering chives have a small bud on the top of each stalk. Their mild flavor is a tasty addition to any stir fry. They can be found in many grocery stores or in Asian markets. If garlic chives are unavailable, use green onions.

Ingredients
- ½ tsp salt
- 2 tbsp dry sherry
- 1 lb (500 g) skinless, boneless chicken breasts, thinly sliced
- 1 tbsp cornstarch
- ½ cup chicken broth
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ tsp sesame oil
- 1 tbsp canola (or peanut) oil
- 1 tsp finely chopped ginger
- 2 garlic cloves, minced
- 4 oz (125 g) sugar snap peas, trimmed
- ¼ cup chopped garlic chives (or green onions)
- ⅓ cup whole almonds, toasted
Instructions
- Combine the salt, sherry and chicken in a medium bowl and set aside.
- Combine the cornstarch, broth, soy sauce, oyster sauce and sesame oil in a small bowl and set aside.
- Heat a wok or large frying pan over medium high heat.
- Add the canola oil, ginger and garlic and stir fry for about 1 minute or until fragrant.
- Add the chicken mixture and stir fry for 3 minutes.
- Add the peas and broth mixture and stir fry for about 2 minutes or until the chicken is tender and the peas are crisp and bright green.
- Add the chives and almonds and stir fry until combined.
Notes
Serving Suggestion: Serve with piping hot, thin rice noodles.
