Citrus Spiced Skewers

Ingredients
- 1½ lb (750 g) skinless, boneless chicken breasts, out into long strips
- ⅓ cup citrus spice rub (see recipe)
- 3 tbsp olive oil
- 2 tbsp mango chutney, plus extra to serve
- 6 wooden skewers, 10 inch (25cm), soaked in water
Instructions
- Combine the chicken, spice rub, oil and chutney in a large non-reactive bowl or re-sealable plastic bag.
- Cover or seal.
- Refrigerate for 8 hours or overnight.
- Preheat the barbecue to medium high.
- Thread the chicken onto the skewers.
- Cook the skewers on the preheated greased grill with the lid closed for 10 to 12 minutes turning occasionally or until the chicken is tender.
- Serve with the extra chutney.
Notes
Make Ahead: The chicken can be marinated a day ahead and stored in a sealed container in the refrigerator.
Serving Suggestion: Serve the skewers with cucumber and yogurt and steamed rice.
Tip: Invest in some metal skewers - they are reusable, do not have to be soaked in water and won't burn on the barbecue.
