Ingredients
- 8 slices crusty bread
- 2 oz (60 g) goat cheese, softened
- 3 tbsp basil pesto
- ½ cups sun-dried tomatoes in oil, drained and chopped
- 1½ cups chopped cooked chicken
- softened butter
Instructions
- Spread half the bread slices with goat cheese.
- Spread the remaining bread slices with the pesto.
- Top the goat cheese with tomatoes and chicken.
- Top with the pesto bread slices.
- Spread top and bottom of sandwiches with a little butter.
- Place the sandwiches in a preheated panni press or two sided sandwich maker.
- Cook for 3 to 5 minutes until golden.

Make Ahead: The pannini is best made just before serving.
