Sun Dried Tomato and Chicken Pannini

  • 8 slices crusty bread
  • 2 oz (60 g) goat cheese, softened
  • 3 tbsp basil pesto
  • ½ cups sun-dried tomatoes in oil, drained and chopped
  • 1½ cups chopped cooked chicken
  • softened butter
  1. Spread half the bread slices with goat cheese.
  2. Spread the remaining bread slices with the pesto.
  3. Top the goat cheese with tomatoes and chicken.
  4. Top with the pesto bread slices.
  5. Spread top and bottom of sandwiches with a little butter.
  6. Place the sandwiches in a preheated panni press or two sided sandwich maker.
  7. Cook for 3 to 5 minutes until golden.
Make Ahead: The pannini is best made just before serving.

Serving suggestion: Serve with a salad or cup of hot soup.
