We used "blue de bresse", a mild and creamy blue cheese in this recipe.

Ingredients
Blue Cheese Dressing
- 2 tbsp finely chopped shallot
- ⅓ cup canola oil
- 2 oz (60 g) of blue cheese, chopped
- 2 tbsp white wine vinegar
- 1 tbsp honey
- salt and cracked black pepper
Chicken Salad
- 1 tbsp canola oil
- 3 medium apples, peeled, cored and sliced
- salt and cracked black pepper
- 2 cups shredded cooked chicken
- 3 cups baby spinach leaves
- 1 radicchio lettuce, torn
Instructions
To Make Blue Cheese Dressing
- Put all the ingredients in a jar and shake well until combined.
To Make Chicken Salad
- Heat the oil in a medium frying pan over medium high heat.
- Add the apples, salt and pepper and cook, stirring occasionally for about 5 minutes or until softened slightly and lightly browned.
- Put the chicken, apples, spinach and radicchio in a large bowl.
- Drizzle with the dressing and gently toss.
Notes
Make Ahead: The dressing can be made a day ahead and stored in an airtight container in the refrigerator. Remove from refrigerator 1 hour before serving.
Serving Suggestion: Serve with warm rolls and a glass of crisp white wine.
