Chicken Quinoa Lettuce Wraps

These are flavorful and delicious, crisp, crunchy and very refreshing on a hot summer day!

Ingredients
- ½ cup quinoa
- 1 cup vegetable broth
- 1 tbsp canola oil
- 1 pound ground chicken
- 1 stem lemongrass, pale section onle, finely chopped (can also be purchased in tubes)
- 1 jalapeno, finely chopped
- 1 shredded carrot
- ¼ cup lime juice
- 1 tsp finely grated lime rind
- 1 tsp fish sauce
- 1 tbsp sweet chili sauce
- ½ small red onion, thinly sliced
- ⅓ cup cilantro leaves
- lettuce leaves
Instructions
- Combine Quinoa and broth in medium saucepan.
- Bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- Cool.
- Heat half the oil in a wok over high heat until just smoking.
- Add ground chicken, lemon grass, jalapeno and carrot.
- Stir fry, breaking any lumps for 5 to 6 minutes until chicken changes color.
- Transfer to a heat proof bowl.
- Set aside for 15 minutes to cool slightly.
- Whisk together lime juice, fish sauce, sweet chili sauce and lime rind in a small bowl until combined, add to chicken mixture.
- Add red onion, cilantro, quinoa and combine thoroughly.
- Generously spoon mixture onto lettuce leaves and enjoy!
