Ginger and Soy Marinade
This is enough to marinate 1 lb (500 g) chicken pieces.

Serves: ¾ cups
Ingredients
- 1 tbsp finely grated ginger
- 2 garlic cloves, minced
- 1 tbsp canola oil
- ½ tsp Chinese five spice powder
- ¼ cup soy sauce
- 1 tbsp rice (or white wine) vinegar
- ¼ cup finely chopped shallot
- 1 tbsp honey
Instructions
- Combine all the ingredients in a large,
non reactive bowl or re-sealable plastic bag. - Add the chicken pieces of your choice.
- Stir or toss to combine. Cover or seal.
- Marinate in the refrigerator for 8 hours or overnight.
- Remove chicken from the marinade and discard any marinade.
- Cook chicken on a barbecue, grill pan or roast in the oven until tender.
Notes
Make ahead: The marinade can be made 2 days ahead and stored in an airtight container in the refrigerator.
